The bunches are picked one by one by hand, when fully ripe, when the peppercorns turn red.
The red grains are then washed, scalded and dried in the sun for 2 to 3 days depending on the environment, until they reach optimal drying.
Its fruity and flowery aromas as well as its spicy and dried flower flavors make it a powerful and very aromatic pepper.
