Provence thyme was listed on February 19 in the register of protected designations of origin (PDO) and protected geographical indications (IGP), which has 1,420 products, announced the European Commission on Monday 26 February.

The IGP is a European label that has existed since 1992. It assures consumers that products derive one or more characteristics from their geographical origin.

Cultivated in the open field or in a natural environment in the south-east of France, the plant "is characterized by a powerful and pungent aroma and taste compared to other so-called 'sweet' thyme", explains the Commission in a press release. "This power is conferred on it by the specific composition of its essential oil, which is rich in carvacrol," says the National Institute of Origin and Quality (INAO). The European executive praises the tradition of picking wild thyme and the "ancient processes of drying, sorting and making bouquets of thyme".

Beyond its aromatic qualities, thyme was also used in older times to keep meats in a correct state. "The presence of thyme in Provence, and the aromatic and taste characteristics of thyme from Provence are often cited in the literature, from Pliny the Elder in the 1st century to Marcel Pagnol", recalls the Commission.

According to INAO, in 2013 there were 50 thyme producers with a production of 90 tonnes. "
