The chestnuts are dried in a traditional dryer (key) thanks to the heat produced by a post-combustion wood-fired boiler (reduction of CO2 emissions) for a 20th day.
Then they are shelled, sorted by hand before being crushed in a granite mill.
The chestnuts are crushed as and when orders are made so that our customers always receive freshly obtained flour.
To keep it at home longer, place it in the refrigerator or freezer.
