La Taiga gold generously offers its delicately sweet fruits.

Indeed, the apples of the Siberian cedars are so called by the Siberians, admiring their country covered with beautiful cedars.

In Siberia, the harvest of cedar pine nuts is the subject of a thousand-year-old tradition.

Cedar reaches maturity and begins producing apples around 18 months. These are harvested in late summer before they hatch.

It takes an average of twenty days for the cedar apple to fully open.

Once opened, we recover the pinions by breaking the cones. The separation work is done by hand.

After harvest, they are put in canvas bags in the sun.

Consumed in Europe and Asia since the Paleolithic, pine nuts have also been a part of the diet of Native Americans in southern and western North America.

60g fresh organic basil

70 g grated Parmesan

3 tablespoons of Hecosfair organic Siberian cedar pine nuts

2 cloves garlic

30 cl of olive oil

Coarse Guérande salt

 

In an electric mixer, finely mix the basil leaves and a good pinch of coarse salt.

Add the fresh grated Parmesan, then the pine nuts.

Gradually add a thin stream of olive oil to create an emulsion like mayonnaise.

Add the peeled garlic cloves.

Mix finely.

Your pesto is ready!

Siberian cedar pine nut chocolate cookie recipe

 

1 handful of chocolate chips

1 handful of cedar pine nuts

¾ cup gluten-free flour

½ organic vanilla pod from Madagascar

½ cup of cocoa powder

100 g of vegetable butter

 

With a mixer, mix the pine nuts, chocolate chips, flour.

Finally, add the chips and the chocolate powder.

Add the vanilla seeds.

Form a ball with your hands then shape a sausage.

Place it in cling film in the refrigerator for 30 minutes.

Cut them into slices and place them on a baking sheet lined with parchment paper, being careful to space them out enough.

Bake at 160/165 ° C for 15-20 minutes.

Mango, avocado and Siberian cedar pine nut salad recipe

2 organic mangoes peeled and cut into cubes

The flesh of 1 avocado cut into cubes

1 tomato cut into cubes

1 good handful of Siberian cedar pine nuts

250 ml (1 cup) fresh lamb's lettuce

45 ml (3 tbsp.) olive oil

30 ml (2 tbsp.) lemon juice

Fleur de sel and pepper

In a bowl, mix all the ingredients. Salt and pepper.
