💚 At the Origins of HECOSFAIR: The Passion of Herlyne Blaise
✨ A founding conviction
I created HECOSFAIR with one conviction: to offer a delicatessen combining gastronomy, natural ingredients, and elegance.
Behind each product, there is a story, a terroir, and the desire to share "good taste for everyone, natural elegance."
📚 A journey between literature and gastronomy
Admitted to the Sorbonne to study Classical and Modern Applied Literature, I settled in Paris at the age of 19.
The city immediately captivated me with its beauty, energy, and refinement. It was also there that I discovered French gastronomy and opened my tastes to cuisines from around the world.
Eager to continually deepen my knowledge, I regularly train in gastronomy, oenology, and the arts of fine dining, in order to enrich HECOSFAIR with this high standards and curiosity.
🌿 The legacy of a family passion
After ten years of working in green and renewable energy, I chose to continue my mother's work in my own way.
Thus, on October 13, 2016, the HECOSFAIR brand was born, and on February 19, 2019, the SASU was officially registered in Paris.
HECOSFAIR is the expression of my combined passions: a love of gastronomy, respect for nature, and kindness towards animals.
🍰 A childhood steeped in delicacies
This legacy comes from my childhood in Haiti, spent with my mother, a caterer and pastry chef on Rue Vallière in Jacmel.
From dawn, the aromas of her creations filled the family home. She worked at a large wooden table in the courtyard and baked her delicacies in the brick oven, which took up a third of the space.
Demanding, she always favored small local producers. I saw her cook with love, value her employees, and bring a community together. Her loyal customers returned time and again, driven by the joy her sweet treats brought them.
Even today, some write to me to tell me that my mother's pastries remain among their fondest childhood memories.
