Harvesting organic cane is exclusively manual, traditionally done with a machete, which protects the plants often uprooted by mechanical harvesting, protects the soil from fire and preserves the quality of the sugar.
The stems are then quickly transported to the sugar factory and processed by respiration and fermentation.
