History and origin

Nothing is more reminiscent of summer than fresh sun-kissed cherries. The cherry, the fruit of the cherry tree, is a small fleshy fruit of red color, which contains a stone in its center.

The wild cherry or birch, Prunus avium, has been present in Europe since the Neolithic period, as evidenced by archaeological finds.

Several varieties are cultivated which are essentially divided into two groups: sweet cherries, which are usually eaten fresh, and sour cherries, which are rather cooked and are used in the composition of jellies, sauces and pies. In both cases, they are extremely rich in nutrients and full of health benefits and virtues. It is packed with vitamin C, copper, iron and manganese.

Some recipes with dried cherries

  • They are served in a salad with baby spinach, finely grated carrots, cucumber and roasted unsalted peanuts. Drizzle with rice vinegar sauce, lemon and orange zest, ginger, orange juice, garlic and tamarind.
  • They can be incorporated into the ingredients of a vinaigrette: they are mixed in a blender with shallot, garlic, vinegar, orange juice and honey until you get a homogeneous mixture. Gradually add walnut oil and turn into a sauce.

  • Mix them with the cooked rice, onions, celery, walnuts, thyme and marjoram, which have been returned to oil and cooked for about ten minutes.
  • Add them to boiled and drained carrots, maple syrup, butter, ginger and nutmeg. We reheat and serve as a starter.

  • Snack: Toss peanuts and dried cherries with curry powder, cumin, garlic and chili pepper, and Worcestershire sauce. Sauté in oil until the peanuts are golden. Cool on baking paper.
  • Alternate starter: Combine dried cherries, sour cream, Dijon mustard, chopped garlic and finely chopped green onion. Put in the fridge for 1 hour and serve with croutons or raw vegetables.
  • Salsa: Dried cherries, frozen cherries, jalapeno pepper, coriander leaves, garlic, red onion. If necessary, thicken with cornstarch.

  • Couscous: Heat some broth with dried cherries, a little butter, salt and pepper until it comes to a boil. Add wheat semolina, remove from heat, let swell for 5 or 10 minutes and serve.
  • Stuffing: Mix dried cherries, celery, onion, garlic, cubes of stale bread, broth, egg, thyme, parsley.

Cherry Crunch Recipe

Ingredients

¼ cup organic cane sugar

2 tbsp. cornstarch

1 C. 1/2 teaspoon organic Ceylon cinnamon

½ tsp. pepper

½ tsp. salt

1/8 c. chilli

2 tbsp. grated lime zest

750g dried pitted cherries

1 C. fresh lime juice

¾ cup of old-fashioned oatmeal

1/3 cup flour

1/3 cup firmly packed light brown sugar

3 tbsp. cold unsalted butter, cut into pieces

Cooking: 25 minutes

  1. Preheat the oven to 200 ° C (400 ° F). In a large bowl, combine the cane sugar, cornstarch, cinnamon, pepper, ¼ tsp. salt, chilli and lime zest. Add the cherries and lime juice, and stir. Pour into a 22 cm square glass baking dish. Book.
  2. In a medium bowl, combine ¼ tsp. salt, oatmeal, flour and brown sugar. Using a pastry blender or two knives, beat in butter until mixture is the consistency of coarse crumbs. Sprinkle over the fruit.
  3. Bake 25 minutes or until the fruit is bubbling and the surface is golden and crispy.
