Scientific names: Cinnamomum verum (synonym: zeylanicum)

Family: lauraceae.

Ceylon cinnamon or real cinnamon

This spice from Ceylon (former name of Sri Lanka) is harvested twice a year.

It comes from the cinnamon tree, a tree whose bark is scraped then cut into strips.

These strips, once dried in the sun, give the sticks that we know.

Its use is ancestral: its existence is mentioned in Chinese botanical treatises dating back several millennia.

Reduced to powder, it is used in sweet or savory recipes.

Although its harvest is biennial, we still find cinnamon all year round.

In 2022, it benefits from the prestigious IGP label, protected geographical indication, a French label which guarantees internationally, the geographical area of their production as well as the know-how used in their development.

It comes in powder or sticks: it all depends on its use.

Cinnamon can be stored for several months (in powder) or even several years (in sticks) in an airtight container, protected from humidity.

Cinnamon, cranberry and maple sugar porridge recipe:

- 150g of organic oat flakes

- 300ml almond milk

- 1 teaspoon of cinnamon

- 1 pinch of 4 spices

- 1 pinch of vanilla

- 1 large handful of dried cranberries

- 60g fresh cranberries (optional)

- 3 spoons of fine maple sugar

- 1 handful of almonds

Place the oatmeal in a saucepan and pour in the almond milk.

Bring to a simmer and cook for about 15 minutes, stirring frequently.

Check the consistency, the porridge should be thick but not too dry.

If it is too dense you can add more milk.

If it's too runny to leave, you can reduce it a bit over medium heat or add an extra tablespoon of flakes.

Add the spices then the fresh or dried cranberries.

Serve warm with the dried cranberries.

Sprinkle generously with fine maple sugar then arrange your almonds.

Enjoy your food !

Traditional French Christmas mulled wine recipe :

  • 1l of red or white wine according to your desires
  • 1 organic orange or 1 apple
  • 1 organic lemon
  • 100g powdered beet sugar
  • 1 stick of organic fairtrade cinnamon PGI from Ceylon
  • 1 star of natural star anise from Haiti
  • 2 cloves
  • 1 pinch of grated nutmeg

Wash and dry the fruit.

Cut them into slices or quarters.

Put them in a saucepan.

Add the wine, sugar and spices.

Bring to a simmer then remove from the heat.

Cover and let steep for 5 minutes.

Serve hot.

Traditional recipe for Bordeaux cannelés:

  • 50 cl of organic milk
  • 50 g of AOP Isigny butter
  • 250 g organic powdered brown sugar
  • 125 g of flour
  • 2 whole eggs + 2 Label rouge egg yolks
  • 2 tablespoons of Barbancourt amber rum from Haiti
  • 1 gourmet bourbon vanilla pod from Madagascar
  • 1 pinch of cinnamon

Split a vanilla pod in half and scrape out the inside with a knife. Dip everything in milk (put in a saucepan).

Bring the mixture to a boil.

Remove from the heat immediately and leave to infuse for 30 minutes.

Meanwhile, in a salad bowl, mix the flour and sugar.

Add the eggs and the rum.

After 30 minutes, remove the vanilla pod from the milk with a strainer.

Add the melted butter to the milk and vanilla mixture.

Mix well.

Dissolve the mixture in the salad bowl.

Leave to rest in the refrigerator until the next day.

Butter the cannelés molds.

Fill the molds 2/3 full with the dough.

Bake for 10 minutes in the oven at 240°C then 30 minutes at 180°C, more if necessary to obtain a caramelized color. Finally

Unmold your hot cannelés.
