Hawaiian black salt is a mixture of sea salt and black lava rock, which is rich in activated carbon.

Originally, the rains pouring down on the slopes of volcanoes drained black lava rock to the coast of the Hawaiian Islands, a coast where salt production was found. Naturally mixed, the salt water and the rock gave, after evaporation, a jet black salt crystal.

Today, after observing nature, we manually add black rock like ink rich in activated carbon in the salt works of Molokai, it mixes with water and evaporating, only crystals remain deep black, a mixture of salt and lava rock!

It has an iodine flavor of course, but with a slightly smoky, fine and balanced taste. It remains a fairly strong salt compared to others. It should not be confused with other black salts: Indian black salt (kala namak) or ritual black salt (black witch salt).


It is a salt which is good for the health (in moderation). Already, the salt itself is less loaded in terms of sodium than a conventional salt: 84% against 99% usually. As a reminder, it is the excess sodium chloride that leads to heart disease, diabetes, stroke and chronic kidney disease.

In addition, activated charcoal has recognized effects throughout the digestive system: good for the stomach, intestines and digestion in general. It also has detoxifying properties. Hawaiian black salt is recommended in Traditional Chinese Medicine, because it has a very high “yang” power in the macrobiotic diet.

More than 11% of the weight of black salt are minerals and trace elements.


The island of Molokai where it comes from is one of the least developed islands in the Hawaiian archipelago. Far from any major pollution, the salt collected there comes from one of the purest waters in the world.

With its deep black color, it is one of the most original and aesthetic table salt!

The history of Hawaiian black salt is quite similar to the history of red alae salt. It is also found in many traditional Hawaiian recipes.

Like its red counterpart, it is used to heal, cleanse, purify and bless tools, canoes, houses and temples.


On the island of Molokai where it comes from, the production of black salt is not new. The inhabitants of the island traded it throughout the archipelago until the 1940s when it gradually disappears. It was at the beginning of the 2000s that by the will of a few people who rediscovered this salt with a low proportion of sodium chloride, that production on the island will resume.


For the record, the Hawaiian salt extraction method is different from ours: the water is first filtered, then it is circulated to retain the liquid with a high concentration of salt and minerals. The loaded water is then drained into drying basins which have the particularity of being chests covered with glass and therefore hermetically closed, with just a small opening for evaporation, in which a filter is placed.


This process ensures that the salt crystals are not exposed at any time to various impurities. Once the water has completely evaporated, the salt is harvested by hand.

The importance of salt can be seen in the multitude of salts produced by the Hawaiian archipelago, with bamboo jade green salt from Hawaii or red salt from Alaea, two emblematic salts of Hawaii, and of course salt. natural white.
