It was between 854 and 859 that the monks of Saint-Sauveur-De-Redon received a donation of several salt marshes on the Guérande peninsula.

Today these salt pans are exploited by producers called salt workers.
Their working techniques have changed little since the time of the monks.

Sea water is admitted into the salt pans during high tides.
It advances slowly while settling, and gradually concentrates in salt until reaching the final basins, called carnations.
In the carnations, the concentration continues under the effect of the sun and the wind until saturation.

Fine, light salt crystals then appear and float in patches on the surface of the water, this is fleur de sel.
It is rare because production is low.
It is “picked” with a specific instrument: the lousse.
