• 70 g organic Brontë PDO pistachio flour – HECOSFAIR

• 80 g all-purpose flour

• 3 whole eggs

• 120 g blond cane sugar

• 120 g unsalted butter, melted

• 1 tsp honey

• ½ tsp baking powder

• 1 pinch of salt

• Zest of one lemon or a few drops of orange blossom water (optional)

Preparation

  1. In a bowl, whisk together the eggs, sugar, and honey until the mixture becomes pale and airy.

  2. Add the all-purpose flour, pistachio flour, baking powder, and salt. Mix gently.

  3. Stir in the melted butter and lemon zest (or orange blossom water).

  4. Let the batter rest in the refrigerator for at least 1 hour — the secret to that perfect domed shape.

  5. Preheat the oven to 200°C (392°F). Fill the madeleine moulds three-quarters full and bake.
