160 g Carnaroli or Arborio rice
1 shallot, finely chopped
1 L hot vegetable stock
1 organic Sicilian lemon (juice and zest)
30 g butter or 1 tbsp olive oil
40 g freshly grated Parmesan
1 tbsp HECOSFAIR Brontë PDO Virgin Pistachio Oil
A few crushed pistachios for garnish
Fleur de sel & white pepper
Sauté the shallot gently in butter (or olive oil) until translucent.
Add the rice and toast for 2 minutes, stirring until lightly glossy.
Pour in the hot stock gradually, one ladle at a time, stirring frequently for about 18 minutes.
When the rice is creamy and al dente, add the lemon juice and zest, Parmesan, and a spoonful of Brontë PDO Virgin Pistachio Oil.
