Serves 4
• 400 g Greek yoghurt or fromage blanc
• 3 tbsp Corsican maquis honey
• 60 g Cervione hazelnuts, lightly toasted and crushed
• Zest of 1 Corsican clementine
• 1 tsp orange blossom water (optional)
Mix the yoghurt with the honey and orange blossom water. Stir in half the hazelnuts. Spoon into small bowls, top with the remaining hazelnuts and clementine zest, and chill. A spoonful is enough to bring Corsica to the palate.

Serves 4
• 4 small goat’s cheeses
• 80 g crushed Cervione hazelnuts
• 1 tbsp olive oil
• Fresh thyme
• Black pepper
Combine hazelnuts, olive oil and thyme. Spread onto each cheese, then bake for 10 minutes at 180°C. Finish with cracked black pepper and serve with rocket salad. Simple, fragrant, irresistible.
