It is a natural sweetener made from the flower sap of the Tnoth palm or Kampong Speu sugar palm.
A sweetener is a substitute sugar or false sugar, because it has a sweet taste but it contains less sucrose than sugar itself.
The Tnoth palm is a symbol of Cambodia and Khmer culture.
The picker climbs the tree and makes small incisions on the flowers.
The sap is heated to obtain a syrup which is then transformed into sugar.
The latter has a low glycemic index.
