The macadamia nut, or Queensland nut, is native to Australia, where walnut trees grow wild in the forests of the Queensland coast and New South Wales.

It is a drupe, a fleshy fruit composed of a white stone in a round, brown, smooth and very hard shell.

Consumed for 5 millennia by the Aborigines, who call it Kindal Kindal, it was discovered in 1858 by two English botanists. Its name was given to it in tribute to the Australian scientist of Scottish origin John Macadam (1827-1865) by Baron Ferdinand Von Mueller (1825-1896).

In tropical conditions, walnut trees stay green all year round and its fruits ripen for several months.

Producers wait for the nuts to fall from the trees and need to quickly extract the fruit from the shell, otherwise it will turn dark.

Vegan pure vegetable macadamia cheese recipe:

1 tsp of Guérande salt

200g of organic macadamia nuts

1 pair of mace (nutmeg flowers)

1 pinch of white Kampot IGP pepper

Soak the macadamia nuts overnight.

Drain and crush the macadamia nuts until you get a fine flour.

Add salt, pepper and mace.

Put your cheese in a mold in the shape you want.

Enjoy your meal !
