Scientific name: Illicium verum
Common name: star anise
English name: star anise
Botanical classification: Illiciaceae family (Illiciaceae)
The star anise is the fruit of the badian tree, a tree native to Asia.
Its leaves give off an aniseed aroma and its flowers, yellow to pink in color, give green fruits with 5 to 11 carpels, but most often 8 in number.
Each carpel has a pretty shiny teardrop-shaped seed.
The fruits are picked by hand, twice a year, in April and October by men or women who climb directly the trees.
They then leave to dry and take their characteristic reddish brown color.
Finally they are carefully cleaned, because it is necessary to remove all the small stems of the badianes, and sorted during long days.
Star anise relieves stomach aches, especially as a poultice.
The infusion is also very effective.
He told himself that we should soak the stars by covering them with boiling water, then put them in a mortar to crush everything with a pestle.
Then, leave the mixture to rest for 15 to 20 minutes on the stomach and stomach, covering with a cloth and keeping warm.
In Marseille, star anise is an essential component of the famous pastis and the books whisper that Maîtres Anysetiers are in charge in the very great secrecy of creating anise liqueur at 45 °. We have heard that there have been meetings on this subject in Dordogne in the splendid Gouffre de Proumeyssac.
